Job Summary

As Iniala prepares to launch an exciting new Thai dining concept in Malta, we are seeking passionate and talented Thai chefs to join our culinary team.

Developed in collaboration with internationally acclaimed chef Ian Kittichai, this concept will celebrate authentic Thai cuisine through refined technique, exceptional ingredients, and meaningful guest experiences.

We are looking for individuals who bring authenticity, precision, and pride to their craft, and who are eager to contribute within a high-performing luxury hospitality environment.

Duties & Responsibilities

  • Oversees the preparation and presentation of dishes within the assigned kitchen section, ensuring consistency, quality, and adherence to established standards.
  • Maintains a clean, organised, and efficient workstation whilst following all food safety and hygiene procedures.
  • Supports the Sous Chef and senior kitchen team to ensure smooth day-to-day kitchen operations and service execution.
  • Ensures mise en place is completed accurately and efficiently ahead of service.
  • Monitors ingredient quality and stock levels within the assigned section, communicating restocking requirements where necessary.
  • Maintains proper portion control and minimises food wastage whilst consistently delivering high-quality dishes.
  • Adheres to all kitchen procedures, including recipe specifications, cooking techniques, and plating standards.
  • Assists in guiding and supporting junior kitchen team members, contributing to a collaborative and professional kitchen culture.
  • Maintains a positive and professional attitude, demonstrating reliability, teamwork, and attention to detail.
  • Carries out any other reasonable duties as required by senior kitchen management.

Qualifications & Experience

  • Previous experience as a Chef de Partie or strong Demi Chef experience within quality-driven kitchens
  • Strong understanding of authentic Thai cuisine and ingredients
  • Ability to work calmly and efficiently in a fast-paced environment
  • High attention to detail and consistency
  • Positive attitude and strong team ethic
  • Good understanding of food hygiene and kitchen safety practices

Working Conditions

  • Required to work flexible shifts, including evenings, weekends, and public holidays.
