Iniala is a luxury hospitality brand renowned for its commitment to culinary excellence, innovation, and outstanding guest experiences. With award-winning properties in multiple locations, we deliver exceptional dining experiences that showcase creativity, precision, and quality.

We are currently seeking a dedicated and talented Head Chef to join our dynamic team. The successful candidate will initially be required to relocate to Thailand for 3-4 months to immerse themselves in our culinary philosophy and operational standards before assuming leadership over our new restaurant operations in Malta.

Duties & Responsibilities

  • Develop and manage kitchen budgets, ensuring efficient use of resources and alignment with financial goals.
  • Play a key role in the pre-opening phase of the restaurant, including: contributing to kitchen design and equipment selection, recruiting, onboarding and training the kitchen brigade, developing SOPs and operational workflows and coordinating with contractors, suppliers and other departments to ensure timely readiness.
  • Assist in the creation and updating of menus in line with our excellence standards and guest expectations.
  • Lead daily kitchen operations, ensuring consistency in food quality, presentation, and hygiene.
  • Supervise and mentor kitchen staff, fostering a positive, high-performing team environment.
  • Manage kitchen inventory and supplier relationships to ensure availability of high-quality ingredients.
  • Monitor and control food costs and waste to achieve budgetary targets.
  • Work closely with the Finance and Purchasing teams to maintain cost-effective operations.
  • Collaborate with the restaurant and front-of-house teams to deliver a seamless, memorable guest dining experience.
  • Ensure full compliance with food safety, hygiene, and sanitation standards.
  • Stay current with global culinary trends and introduce fresh techniques and ideas.
  • Perform other related duties as required.

Qualifications & Experience

  • Proven experience as a Head Chef in a fine dining or luxury hospitality environment.
  • Strong kitchen management and leadership skills, with a hands-on and solutions-focused approach.
  • Excellent organisational, time management, and multitasking abilities.
  • In-depth understanding of kitchen financials, budgeting, and cost control.
  • Passion for culinary innovation and commitment to delivering excellence.
  • Team player with excellent communication and interpersonal skills.
